Polenta痴 and Rissotto痴

In this class, you値l learn the ins and outs of preparing these two traditional Italian dishes. You値l be taught the different cooking techniques for both soft and firm polentas. You値l learn how to prepare risotto in a variety of flavors, from savory to sweet and everything in between. And finally, you値l explore the possibilities that polentas and risottos offer as appetizers, side dishes, and main courses.

Stocks, Soups and Sauces

This class is for the serious cook. You値l start with the basics, learning to prepare stocks from beef, fish, lobster, chicken, and lamb, and you値l learn the many uses of stocks and demi-glosses. From there, you値l move on to some exquisite soups, such as Cream of Butter Nut Squash, Cream of Mushroom, Lentil, and Bisque. And finally, you値l learn about wine sauces and how they can be used to enhance the flavor of beef, chicken, or fish. These sauces are instrumental in such dishes as Fettuccini Alfredo and Chicken a la King.

Desserts

In this class, you will learn to prepare all of the fine desserts served at Amici Signature Italian. You値l start off working with mascarpone cheese, and from there you値l move on to making chocolate, vanilla, and cappuccino pastry creams. You値l learn to prepare sauces like vanilla anglaise, cinnamon sauce, and raspberry puree. You値l also explore the many uses of the almond lace cookie. Finally, you値l learn how to combine all of these items together to create eloquent and delicious desserts, such as Almond Lace Baskets filled with Vanilla Mascarpone Pastry Cream and Fresh Fruit, Cr鑪e Brule, Fruit Compotes with Puff Pastry, Almond Lace Wafers with Chocolate Pastry Cream and Bananas, White Chocolate Bread Pudding with Sun-Dried Cherry Brandy Sauce, and of course Tiramisu.
